Banana Bread ‘Ice Cream’

Perfect Plant Protein wanted to create an ice cream that resembled the flavors of Banana Bread- a favorite Fall treat. We also wanted to create an ice cream that was gluten-free and vegan, with all natural ingredients. With three simple ingredients, Perfect Plant Protein created frozen, creamy, banana goodness that is sure to become your favorite protein packed treat.

6 large bananas
2 tsp. vanilla extract
2 tsp. raw brown sugar
1 scoop vanilla protein

Directions:

Peel and slice bananas into one inch chunks. Freeze overnight (or for at least 6 hours). When banana chunks are fully frozen, combine in blender with raw brown sugar and vanilla extract. Blend until smooth and creamy (you may have to add a couple drops of water). At this point you have two options; serve immediately for a creamy soft serve or smooth into a pan and freeze for harder, scoop-able 'ice cream' later. (3-4 servings)

Protein Waffles

These waffles are packed with nutritious vegetarian protein to help keep you feeling full and satisfied throughout the day. One recipe includes eggs while the other is completely vegan. Pick the one that is perfect for you! Regardless of which recipe you pick, these waffles are sure to provide the delicious protein you need.

2 egg whites
1 tbsp. water
4 tbsp. flaxseed, ground
½ scoop vanilla protein
½ tsp. baking powder
1 tsp. cinnamon
1 tsp. vanilla extract
2 packets stevia

Vegan Variation:

1 tbsp. water
4 tbsp. ground flaxseed
1 mashed banana
½ scoop vanilla protein
½ tsp baking powder
1 tsp cinnamon
1 tsp vanilla extract
2 packets stevia

Directions:

Combine all ingredients in a bowl and blend with an electronic mixer. Pour batter into waffle iron and cook thoroughly. Cooking times vary from iron to iron. If your waffle iron does not have an indicator that tells you when it’s done, I would suggest cooking for 3-4 minutes, or until golden brown. Greasing the waffle iron with butter will make the removal process much easier. Top with fresh fruits, honey or maple syrup.
